I might be a bit biased but I di manage to shoot my best ever score on any course of a 67!

I just went and tested it for myself to see. I'm on the northeast coast of the United States and played with a friend that's on the West Coast. I typically play RTS or motion swing, but played with three click to test it. My friend was the host and I had no lag and a perfectly smooth three click meter. So no problems on my end. I also have my settings at ultrahigh default. I still believe the biggest problem is the Internet connection between two players. Great job on your first course, Andrew.

Also, my frame rates never dropped below 55 and for the most part were mid-60s, and above

My frame rates were unaffected.  It happens in solo play as well negating the theory of it being a connection problem between players.

I've seen this happen before when first playing a very grassy Links course (I forget which). It's when too many individual grass objects are placed which causes the CPU to work hard to calculate all their locations when the views are changed. The designer can change the detail objects density setting in the terrain properties of the course inside of unity which will help.

I’m doing another local links course at the moment and don’t want to have the same problems as West Lancs. Just to clarify, is it the number of different grasses that causes the problem or the area and density of the grasses ie if you had a lot of grass but it was all one type would that be ok?
Any advice would be much appreciated.

Most likely just density of grasses if you are planting using the billboard grasses in the Unity terrain menu. All the billboard grass textures end up on a single texture atlas so adding grasses doesn't impact in the same way as adding tree varieties does.
