Sun city is 25° 20' 54.97” S. 27° 5' 58.8” E

The options in course forge allow for north and west , is there a way of changing this?

If you want to enter a northing, the southing you provided is simply a negative northing:   25° S is the same as -25° N (and 25°N = -25°S).  The same for the easting/westing:  27° E is the same as -27° W  (and 27°W = -27°E).  If you were to use the Northing/Southing and Westing/Easting, I would guess you need to enter a negative sign, where appropriate.   HOWEVER ....

 

Since Mike has not made a tutorial on this (at least at the time of this post), I would do what PP has done and use the UTM coordinates.  Find your location at Wikipedia and click on the coordinates listed on the top right side of the page (or below the map on the right).  That takes you to a new page that provides the UTM coordinates and Zone.  Ignore the subdivision of the Zone (just use 35, not 35J).
